Tylose also referred as CMC Gum, is technically named Carboxymethyl Cellulose and is often used as a thickener in many applications throughout the food service industry. Tylose is a man-made gum which helps products retain moisture. The advantage to gum paste made with tylose is it will be less expensive, be whiter in colour, and dry harder than those made with Gum Tragacanth.
Tylose powder can also be worked into fondant to make a fondant dry quicker and not be so brittle. Great for bow loops, plaques and ribbons.
To create a quick fondant like gum paste - knead 1-3 tsp of Tylose to 1lb of a commercial fondant. In drier humidity environments use less Tylose and in high humidity environments use more Tylose.
